🍗 Slow Cooker Apricot Chicken

🔹 Ingredients (serves 4)

  • 4 boneless, skinless chicken breasts or thighs
  • Salt & pepper to taste
  • 1 can (8 oz) apricot preserves
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard (optional for tang)
  • 2 cloves garlic, minced
  • 1 small onion, chopped (optional)
  • 1 tsp ginger (fresh grated or powdered, optional)
  • 1–2 tbsp water or chicken broth (optional, for thinner sauce)
  • Optional garnish: chopped green onions or sesame seeds

🔹 Instructions

1. Prepare the chicken

  • Season chicken lightly with salt and pepper
  • Place in the slow cooker

2. Make the sauce

  • In a bowl, combine apricot preserves, soy sauce, mustard, garlic, and ginger
  • Pour over the chicken

3. Cook

  • Cover and cook on Low for 4–6 hours or High for 2–3 hours
  • Chicken should be tender and fully cooked

4. Optional thickening

  • If sauce is too thin, remove chicken, and simmer sauce in a small pan to thicken or stir in 1 tsp cornstarch mixed with 1 tbsp water

5. Serve

  • Serve chicken with sauce over rice, quinoa, or noodles
  • Garnish with green onions or sesame seeds
