Ingredients:

  • 2 ripe avocados (cubed)
  • 1 small cucumber (sliced)
  • 1–2 tomatoes (chopped)
  • ¼ red onion (thinly sliced)
  • Fresh coriander or parsley
  • 1–2 tbsp olive oil
  • Juice of 1 lemon
  • Salt & black pepper (to taste)

    • Cut avocados last so they stay fresh and green.
