Roast chicken is one of those dishes that looks fancy but is actually pretty simple once you get the basics right. Here’s a solid, reliable way to make it:


🔥 Classic Roast Chicken Recipe

Ingredients:

  • 1 whole chicken (about 1.2–1.5 kg)
  • 2–3 tbsp butter or oil
  • Salt & black pepper
  • 1 lemon (halved)
  • 4–5 garlic cloves (smashed)
  • Fresh herbs (optional: rosemary, thyme)
  • 1 onion (quartered)

🧑‍🍳 Instructions:

  1. Preheat oven to 200°C (about 400°F).
  2. Prep the chicken:
    • Pat it dry with paper towels (this helps crisp the skin).
    • Rub butter or oil all over.
    • Season generously with salt and pepper (inside too).
  3. Stuff for flavor:
    • Put lemon halves, garlic, onion, and herbs inside the cavity.
  4. Tie the legs (optional) and tuck the wings under.
  5. Roast:
    • Place in a roasting tray (breast side up).
    • Roast for about 1 hour 15 minutes (roughly 20 min per 500g).
  6. Baste (optional):
    • Spoon juices over the chicken once or twice during cooking.
  7. Check doneness:
    • Juices run clear when you pierce the thigh.
    • Internal temp ~75°C.
  8. Rest it:
    • Let it sit for 10–15 minutes before carving.

🍽️ Tips:

  • For extra crispy skin, leave the chicken uncovered in the fridge for a few hours before roasting.
  • Add potatoes and carrots to the tray—they’ll cook in the chicken juices.
  • A little paprika or chili powder gives it a nice kick.
