Perfect for weeknights or fridge-cleaning days.

🥕 Easy Vegetable Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 potato (or sweet potato), diced
  • 1 zucchini, chopped (optional)
  • 1 cup green beans or peas
  • 1 can diced tomatoes (or 2 fresh tomatoes)
  • 4–5 cups vegetable broth (or water + bouillon)
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • 1 tsp dried herbs (thyme, oregano, or Italian seasoning)
  • Optional: bay leaf, chili flakes, fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until soft (about 3–4 minutes).
  3. Add garlic, carrots, and celery. Cook 2 more minutes.
  4. Stir in potatoes, zucchini, green beans, tomatoes, broth, salt, pepper, and herbs.
  5. Bring to a boil, then lower heat and simmer uncovered for 20–25 minutes, until veggies are tender.
  6. Taste and adjust seasoning. Remove bay leaf if used.
  7. Finish with parsley or a squeeze of lemon if you like.

Optional upgrades

  • Add canned beans or lentils for protein
  • Stir in a handful of pasta or rice
  • Blend half the soup for a creamy texture
  • Finish with grated parmesan or a drizzle of olive oil
