Here’s a mouthwatering recipe for Cheesy Bacon Cheeseburger Meatloaf—a perfect comfort food that combines juicy ground beef, melted cheese, and smoky bacon.


Ingredients (6–8 servings)

  • Meatloaf Base:
    • 2 lbs (900 g) ground beef (or half beef, half pork for extra flavor)
    • 1 cup breadcrumbs
    • 1/2 cup milk
    • 2 large eggs
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 tsp Worcestershire sauce
  • Cheese Filling:
    • 1 cup shredded cheddar cheese (or your favorite burger cheese)
  • Topping:
    • 6–8 slices bacon
    • 1/2 cup ketchup

    • 1 tsp mustard (optional)

Instructions

  1. Preheat oven:
    • Preheat to 350°F (175°C).
  2. Prepare meatloaf mixture:
    • In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, salt, pepper, and Worcestershire sauce. Mix gently until combined—don’t overmix.
  3. Assemble meatloaf with cheese:
    • On a baking sheet or in a loaf pan, shape half the meat mixture into a loaf.
    • Sprinkle the shredded cheese evenly over the center.
    • Cover with remaining meat mixture and seal the edges.
  4. Add bacon and glaze:
    • Lay bacon slices over the top of the meatloaf.
    • In a small bowl, mix ketchup, brown sugar, and mustard, then brush over the bacon.
  5. Bake:
    • Bake for 60–70 minutes, or until internal temperature reaches 160°F (71°C).
    • For extra crispy bacon, broil for 2–3 minutes at the end.
  6. Rest and serve:
    • Let meatloaf rest 10 minutes before slicing. Serve with mashed potatoes, roasted veggies, or a side salad.

Tips

  • For juicier meatloaf, use a combination of beef and pork, or add a few tablespoons of finely diced mushrooms.
  • You can stuff extra cheese inside for gooey pockets.
