Chicken curry

Here’s a flavorful, easy chicken curry recipe that’s aromatic, rich, and perfect with rice or flatbreads:


🍛 Easy Chicken Curry

Ingredients (serves 4):

  • 1 lb (450g) chicken thighs or breast, cut into bite-sized pieces
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 teaspoons curry powder (or 1 tsp turmeric + 1 tsp cumin + 1 tsp coriander)
  • 1 teaspoon chili powder or paprika (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk or plain yogurt
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Cook aromatics:
    • Heat oil in a large skillet over medium heat.
    • Sauté onions until golden. Add garlic and ginger, cook 1–2 minutes until fragrant.
  2. Add spices:
    • Stir in curry powder, chili powder, and other spices. Cook 30 seconds to release flavor.
  3. Cook chicken:
    • Add chicken pieces and sauté until lightly browned on all sides.
  4. Add tomatoes:
    • Pour in diced tomatoes and a little water if needed. Simmer 15–20 minutes until chicken is cooked through.
  5. Finish with creaminess:
    • Stir in coconut milk or yogurt. Simmer 5 more minutes until sauce is rich and slightly thickened.
  6. Serve:
    • Garnish with cilantro. Serve with steamed rice, naan, or roti.

💡 Tips:

  • For extra depth, sauté spices in a little butter or ghee instead of oil
  • Add vegetables like peas, bell peppers, or potatoes to bulk it up
  • Marinating chicken in yogurt and spices for 30 minutes before cooking makes it even more tender
