Cheesy Chicken and Rice Casserole

Ingredients (serves 4–6):

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped onion

Instructions:

  1. Preheat oven: 180°C (350°F).
  2. Mix everything:
    In a large bowl, combine chicken, uncooked rice, broth, milk, soup, onion, vegetables, and seasonings. Mix well.
  3. Assemble:
    Pour mixture into a greased 9×13-inch baking dish. Spread evenly.
  4. Add cheese:
    Sprinkle shredded cheddar cheese over the top.
  5. Bake:
    Cover with foil and bake for 45 minutes.
    Remove foil and bake another 15–20 minutes until rice is tender and top is golden.
  6. Rest & serve:
    Let sit for 5–10 minutes before serving so it sets nicely.
