Shepherd’s Pie

Ingredients (Serves 6)

For the meat filling:

  • 1 lb ground lamb (or beef for “Cottage Pie”)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup beef or chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt & pepper, to taste
  • 2 tablespoons flour (optional, for thickening)

For the mashed potato topping:

  • 4 cups mashed potatoes (about 2 lbs potatoes)
  • 2 tablespoons butter
  • 1/4 cup milk (or cream)
  • Salt & pepper, to taste
  • Optional: 1/2 cup shredded cheddar cheese for topping

Instructions

  1. Preheat oven
    • Preheat to 400°F (200°C).
  2. Cook the filling
    • In a large skillet, cook ground lamb over medium heat until browned. Drain excess fat.
    • Add onion, garlic, and carrots; cook 5 minutes until softened.
    • Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper, and flour (if using).
    • Add broth and simmer 5–7 minutes until slightly thickened. Stir in peas at the end.
  3. Prepare mashed potato topping
    • Mix mashed potatoes with butter, milk, salt, and pepper until creamy.
  4. Assemble the pie
    • Spread meat mixture evenly in a 9×13 baking dish.
    • Spread mashed potatoes on top, smoothing with a spatula.
    • Optional: sprinkle shredded cheddar cheese on top.
  5. Bake
    • Bake 20–25 minutes until potatoes are slightly golden and filling is bubbling.
  6. Serve
    • Let sit 5 minutes before serving.

  • Use leftover mashed potatoes for a super quick version.
  • For extra flavor, add a splash of cream or sour cream to the mashed potatoes.
  • Sprinkle paprika on top before baking for color.
  • Swap lamb for ground beef for a classic “Cottage Pie.”
