🍲 Amala and Okro Soup

🧾 Ingredients:

For Amala (Yam Flour Version):

  • 2 cups yam flour (elubo)
  • 3 cups water

For Okro Soup:

  • 200–250g okra (fresh or frozen, chopped)
  • 200g assorted meat (beef, tripe, or goat meat, pre-cooked)
  • 100g smoked fish (optional)
  • 1 onion (chopped)
  • 2–3 tbsp palm oil
  • 1–2 scotch bonnet peppers (or chili, blended)
  • 1 tsp ground crayfish (optional)
  • Salt and bouillon cubes to taste
  • 2 cups water or stock

👩‍🍳 Instructions:

1. Prepare Amala:

  1. Boil water in a pot.
  2. Gradually pour in yam flour while stirring continuously to avoid lumps.
  3. Cook on low heat for 5–7 minutes until smooth, stretchy, and thick. Set aside, cover to keep warm.

2. Prepare Okro Soup:

  1. Heat palm oil in a pot. Add onions and sauté briefly.
  2. Add pre-cooked meat and smoked fish, stir well.
  3. Blend or finely chop okra and add to the pot.
  4. Add water or stock gradually, then stir in blended peppers and crayfish.
  5. Season with salt and bouillon cubes.
  6. Simmer on medium heat for 10–15 minutes, stirring occasionally. The soup should be slightly slimy but thick.

3. Serve:

  • Scoop Amala onto a plate.
  • Pour or dip Okro Soup on top. Enjoy together.

  • For a smoother texture, chop okra very finely.
  • Add more water if you prefer thinner soup.
  • You can include other vegetables like spinach or ugu leaves for extra nutrients.
  • Use fresh smoked fish for authentic flavor.
