Here’s a comforting, flavorful egg curry recipe you can make at home—rich, slightly spicy, and perfect with roti or rice:


🍳 Egg Curry (Desi Style)

🧾 Ingredients:

  • 4–6 boiled eggs (peeled)
  • 2 tbsp oil
  • 1 large onion (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1 tsp ginger-garlic paste
  • 1–2 green chilies (optional)
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves (for garnish)

👩‍🍳 Instructions:

  1. Prep the eggs
    Lightly score or make small slits in the boiled eggs. You can also shallow-fry them in a little oil with a pinch of turmeric and salt until slightly golden (optional but adds flavor).
  2. Make the base
    Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and cook until golden brown.
  3. Add aromatics
    Stir in ginger-garlic paste and green chilies. Cook for 1–2 minutes until fragrant.
  4. Tomato & spices
    Add tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until oil separates from the masala.
  5. Gravy
    Add water and bring to a simmer. Adjust consistency as you like.
  6. Add eggs
    Gently place the eggs into the gravy. Simmer for 5–7 minutes so they absorb the flavors.
  7. Finish
    Sprinkle garam masala and garnish with fresh coriander.

🍽️ Serving Suggestions:

  • Serve hot with roti, naan, or steamed rice
  • Add a squeeze of lemon for extra freshness
