Spinach and cheese casserole

Ohhh cozy classic 🧀🌿 spinach and cheese casserole—creamy, cheesy, and perfect as a side or light main. Here’s an easy, crowd-pleasing version:


Ingredients (Serves 6–8)

  • 2 (10 oz) packages frozen chopped spinach, thawed & well-drained
    (or 1½ lbs fresh spinach, cooked and chopped)
  • 1 cup cottage cheese or ricotta cheese
  • 1 cup sour cream
  • 2 large eggs
  • 1½ cups shredded cheddar cheese (or cheddar-jack blend)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt & pepper, to taste

Optional topping:

  • ½ cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix the casserole
    • In a large bowl, combine spinach, cottage/ricotta cheese, sour cream, eggs, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Assemble
    • Spread mixture evenly into the prepared baking dish.
    • If using topping, mix crackers with melted butter and sprinkle on top.
  4. Bake
    • Bake uncovered for 35–40 minutes, until set and lightly golden on top.
  5. Rest & serve
    • Let sit 5–10 minutes before serving.

🔥 Tips & Variations

  • Add sautéed onions or garlic for deeper flavor.
  • Mix in cooked bacon or ham for a heartier dish.
  • Swap cheddar for Gruyère, Swiss, or mozzarella for a different vibe.

This one’s great next to roasted chicken, ham, or fish—or honestly just by itself with some crusty bread 😌
