  • 4 lobster tails
  • 1/2 cup unsalted butter, melted

Instructions

  1. Prep the lobster tails
    • Preheat oven to 425°F (220°C).
    • Using kitchen shears, cut the top of the shell lengthwise.
    • Gently pull the lobster meat up and rest it on top of the shell (but keep it attached at the base).
  2. Make garlic butter
    • In a bowl, mix melted butter, garlic, lemon juice, paprika, salt, and pepper.
  3. Season & bake
    • Brush lobster meat generously with garlic butter.
    • Place tails on a baking sheet and bake for 10–12 minutes, until almost cooked.
  4. Add cheese
    • Remove from oven, sprinkle mozzarella and Parmesan over the lobster.
    • Return to oven and bake 3–5 minutes more, until cheese is melted and bubbly (broil 1 minute for golden tops if desired).
  5. Finish & serve
    • Sprinkle with fresh parsley.
    • Serve immediately with lemon wedges and extra garlic butter for dipping.
