🍳 Basic Homemade English Muffin Recipe

Ingredients (Makes 6–8 muffins)

  • 3 cups all-purpose flour
  • 2 tsp sugar
  • 1 tsp salt
  • 2 tsp instant yeast
  • ¾ cup warm milk (~40°C / 105°F)
  • 2 tbsp butter, softened
  • Cornmeal or flour for dusting

Steps

  1. Make the dough
    • Mix flour, sugar, salt, yeast.
    • Add warm milk and butter → knead 8–10 minutes until smooth.
  2. First rise
    • Cover with a towel, let rise 1–2 hours until doubled.
  3. Shape muffins
    • Punch down dough, roll into a 1–1.5 inch thick rectangle.
    • Cut into 2–3 inch rounds with a biscuit cutter.
    • Sprinkle cornmeal on a baking tray and place muffins on it.
  4. Second rise
    • Cover and let rise 30–45 minutes until puffed.
  5. Cook muffins
    • Heat a skillet or griddle over medium-low heat.
    • Cook each side 6–8 minutes until golden brown and cooked through.
  6. Cool & serve
    • Split with a fork to preserve nooks and crannies. Toast and top as desired.
