Meatloaf in a muffin pan

Mini meatloaves baked in a muffin pan are perfect for quick cooking, easy portions, and a great poolside-friendly meal.


🧁 Mini Meatloaf (Muffin Pan)

🛒 Ingredients

  • 500g ground beef (or beef + chicken mix)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano or thyme

🍅 Glaze (Optional but Recommended)

  • ¼ cup ketchup
  • 1 tbsp brown sugar or honey
  • 1 tsp mustard

👩‍🍳 Instructions

  1. Preheat oven
    180°C (350°F)
  2. Mix everything
    In a bowl, combine beef, onion, garlic, egg, breadcrumbs, milk, ketchup, and seasonings. Mix gently (don’t overwork).
  3. Fill muffin pan
    Grease a 12-cup muffin tray and divide mixture evenly into each cup.
  4. Add glaze
    Mix glaze ingredients and spread a little on top of each mini meatloaf.
  5. Bake
    Bake for 20–25 minutes until cooked through.
  6. Rest & serve
    Let them sit for 5 minutes before removing.
