Vegetable soup

Vegetable soup is simple, comforting, and very flexible—you can use whatever veggies you have and adjust the flavor to your taste.

🥕🥔 Classic Vegetable Soup

Ingredients:

  • 2 tbsp oil or butter
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 carrot (chopped)
  • 1 potato (cubed)
  • 1 cup cabbage or cauliflower
  • 1 tomato (chopped)
  • 4 cups water or vegetable/chicken stock
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp mixed herbs or oregano

Instructions:

  1. Heat oil in a pot and sauté onion until soft.
  2. Add garlic and cook for 30 seconds.
  3. Add carrots, potatoes, and other veggies—cook for 2–3 minutes.
  4. Add tomatoes, salt, pepper, and herbs.
  5. Pour in water or stock and bring to a boil.
  6. Lower heat and simmer for 20–25 minutes until veggies are tender.

  • Smooth soup: Blend everything after cooking
  • Chunky soup: Leave as is for texture
  • Desi style: Add a pinch of turmeric + cumin
  • Creamy: Add a splash of cream or milk
