Slow cooker potato

Here’s a simple and tasty way to make slow cooker potatoes:

Ingredients:

  • 2–3 lbs (900–1350 g) small potatoes, halved or quartered if large
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder or 2 cloves fresh garlic, minced
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper to taste
  • Optional: ½ cup chicken or vegetable broth for extra flavor

Instructions:

  1. Prep the potatoes: Wash and cut potatoes evenly.
  2. Season: Toss potatoes with olive oil, garlic, herbs, salt, and pepper.
  3. Place in slow cooker: Spread potatoes evenly. Pour broth over them if using.
  4. Cook:
    • Low for 6–7 hours or High for 3–4 hours, until tender.
  5. Optional finishing touch: For crispy edges, spread cooked potatoes on a baking sheet and broil for 5–7 minutes.

These are perfect as a side dish with roasted meats, stews, or even on their own with a dollop of sour cream.
