Here’s a hearty and flavorful Smoked Sausage and Potato Bake—perfect for a one-pan meal that’s crispy, savory, and satisfying.


Ingredients (Serves 4–6)

  • 1 lb (450 g) smoked sausage, sliced into ½-inch rounds
  • 4–5 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven:
    • 400°F (200°C). Grease a 9×13-inch baking dish or sheet pan.
  2. Prepare vegetables:
    • Toss diced potatoes with 1 tbsp olive oil, paprika, salt, and pepper.
    • Spread in the baking dish and roast for 15–20 minutes until they start to soften.
  3. Cook sausage & aromatics:
    • In a skillet, heat 1 tbsp olive oil and sauté onion, bell pepper, and garlic for 3–4 minutes until fragrant.
    • Add sliced smoked sausage and cook 3–5 minutes until lightly browned.
  4. Combine & bake:
    • Mix sausage and vegetables together in the baking dish.
    • Sprinkle seasoning and cheese over the top, if using.
    • Bake another 15–20 minutes until potatoes are tender and cheese is melted/golden.
  5. Serve:
    • Let rest 5 minutes before serving. Garnish with fresh parsley if desired.

Tips & Variations

  • Use sweet potatoes for a slightly sweeter flavor.
  • Add mushrooms or zucchini for extra veggies.
  • For a creamy version, stir in ½ cup sour cream or cream cheese before baking.
  • Serve with mustard or ketchup on the side for extra zing.

✅ Tip: Cutting potatoes small ensures they cook evenly and get slightly crispy at the edges.
