Slow Cooker Cinnamon Sugar Glazed Carrots

Here’s a simple and sweet recipe for Slow Cooker Cinnamon Sugar Glazed Carrots—a perfect side dish for any meal.


Ingredients (Serves 4–6)

  • 1 lb (450 g) carrots, peeled and cut into sticks or rounds
  • 2 tbsp unsalted butter
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp vanilla extract (optional)
  • 2–3 tbsp water (to prevent sticking)

Instructions

  1. Prepare the carrots:
    • Peel and cut carrots into uniform sticks or rounds for even cooking.
  2. Combine in slow cooker:
    • Place carrots in the slow cooker.
    • Add butter, brown sugar, cinnamon, salt, and water. Toss to coat evenly.
    • Optional: stir in vanilla extract for extra flavor.
  3. Cook:
    • Cover and cook on low for 3–4 hours or high for 1.5–2 hours, until carrots are tender but not mushy.
  4. Glaze the carrots:
    • About 15–20 minutes before serving, stir carrots to coat in the melted sugar-butter mixture.
    • If desired, turn the slow cooker to high for the last few minutes to thicken the glaze slightly.
  5. Serve:
    • Transfer carrots to a serving dish and drizzle with any remaining glaze.
    • Optional garnish: a sprinkle of fresh parsley or a pinch of extra cinnamon.

✅ Tip: For extra depth of flavor, add a pinch of nutmeg or a splash of orange juice before cooking. These carrots also pair wonderfully with roasted meats or a holiday meal.
