Slow cooker chicken thighs

Posted on March 23, 2026 by Admin

Here’s a simple, juicy, and flavorful slow cooker chicken thighs recipe—perfect for an easy, hands-off meal.

Ingredients (Serves 4–6)

  • 6–8 bone-in or boneless chicken thighs
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tbsp soy sauce (optional, for depth)
  • 1 tbsp honey or brown sugar (optional, for balance)

Instructions

  1. Season the Chicken:
Pat chicken thighs dry and season with salt, pepper, garlic powder, paprika, and thyme.
  2. Layer in Slow Cooker:
    • Place sliced onion and garlic in the bottom.
    • Add chicken thighs on top.
    • Pour in chicken broth, soy sauce, and honey if using.
  3. Cook:
    • Cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
  4. Optional: Crisp the Skin
    • For crispy skin, transfer cooked chicken to a baking sheet and broil in the oven for 3–5 minutes.
  5. Serve:
    • Spoon some of the juices over the chicken.
    • Serve with rice, mashed potatoes, or vegetables.

💡 Flavor Variations:

  • Garlic Butter: Add extra butter and fresh herbs.
  • BBQ Style: Replace broth with BBQ sauce.
  • Honey Garlic: Increase honey and soy sauce, add a splash of vinegar.
  • Creamy: Stir in cream or cream cheese at the end for a rich sauce.

💡 Tips:

  • Bone-in thighs stay juicier, but boneless work great too.
  • Don’t overfill the slow cooker—keep chicken in a single layer if possible.
  • Save the cooking liquid as a sauce or gravy base.

If you want, I can give a complete slow cooker meal (with potatoes and vegetables cooked together) so everything is ready in one pot.
