Here’s a super easy and delicious recipe for Oatmeal Chocolate Peanut Butter No-Bake Candy Bars—rich, chewy, and perfect when you don’t want to turn on the oven.


Ingredients (Makes about 12 bars)

Base Layer:

  • 2 cups old-fashioned oats
  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Chocolate Topping:

  • 1 cup chocolate chips
  • 2 tbsp peanut butter

Instructions

  1. Prepare the Pan:
    Line an 8×8-inch pan with parchment paper for easy removal.
  2. Make the Base:
    • In a saucepan over low heat, melt peanut butter, honey (or maple syrup), and butter together until smooth.
    • Remove from heat and stir in vanilla and salt.
    • Mix in oats until fully coated.
  3. Press into Pan:
    • Transfer the mixture into the prepared pan.
    • Press down firmly and evenly using a spatula or the back of a spoon.
  4. Make Chocolate Layer:
    • Melt chocolate chips and 2 tbsp peanut butter together (microwave in 30-second intervals, stirring each time, or use a double boiler).
    • Spread evenly over the oat layer.
  5. Chill:
    • Refrigerate for 1–2 hours until set.
  6. Slice and Serve:
    • Lift out using parchment, cut into bars, and enjoy!

💡 Tips:

  • Use quick oats for a softer texture or old-fashioned oats for more chew.
  • Add chopped peanuts or a sprinkle of sea salt on top for extra crunch and flavor.
  • Store in the fridge for up to a week, or freeze for longer storage.
