Fried potatoes, onions, smoked sausage, and green beans

OHH yes 😮‍🔥—that’s a one-pan, old-school comfort classic. Crispy potatoes, smoky sausage, sweet onions, and tender green beans? Elite.


🥔🍖 Fried Potatoes, Onions, Smoked Sausage & Green Beans

Serves: 4
Time: ~35–40 minutes
Pan: Big skillet (cast iron if you have it)

Ingredients

  • 1½–2 lbs potatoes (russet or red), sliced or diced
  • 12–14 oz smoked sausage, sliced (kielbasa, andouille, or beef)
  • 1 medium onion, sliced
  • 2 cups fresh or frozen green beans
  • 3–4 tbsp oil or bacon grease (highly recommended)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • Optional: red pepper flakes

Instructions

1️⃣ Parboil the potatoes (optional but great)
Boil potatoes in salted water 5–7 min until just tender. Drain well.
(This speeds things up and guarantees soft centers.)

2️⃣ Brown the sausage
Heat 1 tbsp oil in skillet over medium-high heat.
Add sausage and brown well. Remove and set aside.

3️⃣ Fry the potatoes
Add remaining oil. Spread potatoes in a single layer.
Let cook undisturbed 4–5 min for crispiness, then flip.
Season with salt, pepper, garlic powder, and paprika.

4️⃣ Add onions & green beans
Once potatoes are golden, add onions and green beans.
Cook 5–7 min until onions soften and beans are tender.

5️⃣ Bring it together
Return sausage to pan. Toss everything together.
Taste and adjust seasoning. Add red pepper flakes if you like heat.

  • Don’t overcrowd the pan—crispy > soggy
  • Bacon grease takes this to another level
  • Fresh green beans = more bite; frozen = softer, faster

🍽️ Serve With

  • Cornbread
  • Fried eggs on top (trust me)
  • Hot sauce or pepper vinegar
