🍲 Canadian Cheese Soup
Ingredients
- 4 tbsp butter
- 1 small onion, finely diced
- 1 celery stalk, diced
- 1 carrot, diced
- ¼ cup all-purpose flour
- 2 cups chicken broth
- 2 cups milk (or half-and-half for extra richness)
- 2 cups sharp Canadian cheddar, freshly grated
- 1 cup shredded mozzarella (for stretch + creaminess)
- 1 tsp dry mustard
- ½ tsp paprika
- Salt & black pepper, to taste
- Optional but very Canadian:
- ¼ cup beer (lager)
- 2 tbsp maple syrup (just a touch)
Instructions
- Build the base
Melt butter in a large pot over medium heat.
Add onion, celery, and carrot. Cook 5–7 minutes until soft. - Make the roux
Stir in flour and cook 1 minute (don’t brown it). - Add liquids
Slowly whisk in broth, then milk.
Bring to a gentle simmer, stirring until slightly thickened. - Cheese time
Lower heat. Add cheeses a handful at a time, stirring until melted and smooth. - Season
Add dry mustard, paprika, salt, and pepper.
Stir in beer and maple syrup if using. - Finish
Simmer gently 5 minutes. Do not boil or the cheese can break.
