Ultra-cozy, creamy, and perfect for cold weather energy.


🍲 Canadian Cheese Soup

Ingredients

  • 4 tbsp butter
  • 1 small onion, finely diced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups milk (or half-and-half for extra richness)
  • 2 cups sharp Canadian cheddar, freshly grated
  • 1 cup shredded mozzarella (for stretch + creaminess)
  • 1 tsp dry mustard
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • Optional but very Canadian:
    • ¼ cup beer (lager)
    • 2 tbsp maple syrup (just a touch)

Instructions

  1. Build the base
    Melt butter in a large pot over medium heat.
    Add onion, celery, and carrot. Cook 5–7 minutes until soft.
  2. Make the roux
    Stir in flour and cook 1 minute (don’t brown it).
  3. Add liquids
    Slowly whisk in broth, then milk.
    Bring to a gentle simmer, stirring until slightly thickened.
  4. Cheese time
    Lower heat. Add cheeses a handful at a time, stirring until melted and smooth.
  5. Season
    Add dry mustard, paprika, salt, and pepper.
    Stir in beer and maple syrup if using.
  6. Finish
    Simmer gently 5 minutes. Do not boil or the cheese can break.

🥖 Serve With

  • Crusty bread or garlic toast
  • Pretzel buns (elite combo)
  • Bacon bits or chives on top
  • A drizzle of cream for drama

🔥 Variations

  • Broccoli Cheddar: add 2 cups steamed broccoli
  • Smoked Cheddar: replace half the cheddar
  • Poutine Soup: add diced potatoes + top with gravy drizzle 👀
